Poached egg, crouton and spinach salad with meyer lemon-poppyseed dressing


These are the ingredients in Kraft Poppy Seed salad dressing: water, sugar, soybean oil, modified milk ingredients (contains soybean lecithin), red wine vinegar, white vinegar, salt, poppy seeds, xanthan gum, dried onions, propylene glycol alginate, potassium sorbate, mustard, polysorbate 60, colour, natural flavour, calcium disodium edta. (b387c).

These could be the ingredients in your own, simple home made salad dressing: greek yogurt, lemon juice, honey, salt and poppy seeds.


Today is day five of my attempt to make seven salads in seven days. Today was another long work day and I did not want to get too fancy for dinner because I just did not have the energy. I went with a classic combination of spinach, avocado and tomatoes and added some quick home made croutons and poached eggs. What adds just a touch of specialness is the home made dressing; creamy, slightly sweet and lemony.


Poached egg spinach salad with meyer lemon-poppy seed dressing

Ingredients
1/4 cup thick greek yogurt
Juice of one meyer lemon
Sea salt
2 tsp honey
1/2 tsp poppy seeds
Baby spinach, enough for 2 large salads
2 tomatoes, 1/2" slices
1/2 avocado, sliced
2 slices of sour dough bread, cubed

Directions
1 - Preheat oven to 350F.
2 - Start by making yogurt dressing. Mix yogurt, lemon juice, sea salt, honey and poppy seeds. Set aside.
3 - Bring a pot of water to boil for poaching eggs.
4 - Heat a separate  pan to medium heat, brush pan with olive oil and place on tomato slices. Cook bout 5 minutes each side.
5 - Make simple croutons by baking cubed pieces of thick bread in preheated oven for about 10 minutes, tossing once halfway through cooking.
6 - Meanwhile poach eggs by following directions at the bottom of this post.
7 - Remove tomato slices from pan. Throw spinach in warm pan and toss, about 30, seconds to \warm just slightly.
8 - Place spinach on plate. Top with tomato slices, sliced avocado, croutons and poached eggs. Serve drizzled with lemon-poppy seed dressing.
